Bulgarian Tarator
Tarator is a refreshing Bulgarian soup that’s perfect for a warm afternoon or sunny morning. Not only is it easy to make and serve, but it’s also delicious, healthy, and supposedly a cure for hangovers. Best of all, there’s no need to fire up the oven! This soup is a simple blend with no heat required.
This version of the classic recipe is heavy on garlic and includes chopped walnuts, but you can always adjust the proportions to suit your own tastes.
Ingredients:
1 large or 2 medium cucumbers
2 cups plain yogurt
2 tbsp. fresh chopped dill
4 cloves garlic, minced
2 tsp. olive oil
Salt to taste
1/2 cup or more water
3 tbsp. finely chopped walnuts (optional)
Instructions:
Skin the cucumber and chop it into very fine cubes.
Combine cucumber, yogurt, dill, garlic, and olive oil, mixing until well blended.
Add salt to taste, usually 1/2 to 1 tsp.
Stir in water until the soup has reached your preferred thickness. You can also add ice cubes to speed up the chilling process.
Add walnuts if desired.
Refrigerate until chilled, serve, and enjoy!
